yup its the begining of week 2 and I am flagging... that was a horrible workout. Not sure if it's leftover from not getting enough sleep yesterday or what but I have zero energy. I will make sure I am active today around the house to make up for it. Maybe it some power food for dinner for extra energy.
I started making Kellen a quilt yesterday =) I hope it turns out fantastic. A twin sized quilt for his new twin sized mattress. He still doesn't have the whole bed in his room, but, we want to make sure he isn't going to fall to the floor first!

Insanity!
Day 2 of doing Insanity the Asylum... and yup it sure does live up to the name. So far all the moves are easy it's just that you do them so many times that you go insane =p There is no way I'm posing my before pictures on here except maybe once I'm finished. My starting weight is 179... time to get those baby pounds back off again. I was about 155 when I got pregnant with Trent and a size 8/10. This time I'm going for the glory (135) because I have no plans on getting pregnant until Trent is already 2, if not older.

It's the most wonderful time of the year
It's the most wonderful time of the year...
or not if your like me and DO NOT enjoy the winter weather *shivers*
So, I am in the process of knitting my little bambinos some winter hats. I chose some nice and soft cashmere yarn (2 colors for each hat) and knitted them simultaneously This is Kellen's hat, he requested blue and I added the maroon. Not sure if I like the pom pom (It looks huge on Trent's head - he was my model since Kellen was sleeping when I took the finished picture!).

it's that time of year again!
Time for knitting winter hats (I'm trying out a new more complicated pattern for Addison) I'll have to blog some pictures. This year I'm using a super soft cashmere and it is expensive about $16 a hat but I couldn't resist! They could have been $8 with the same yarn BUT I wanted them really cozy so I'm knitting two yarns together... hard to describe will post about it later.
I was doing a little Christmas shopping online today! I ordered the kids each a play cape with their names on them from etsy. I also ordered Trenton some babylegs and some wooden teethers from etsy. On my list to be considered are these things:

the kids LOVE to pretend cook and use whatever they can find and pretend it's certain foods, so I thought it would be great for them to have "real" food and dishes =) I'm not sure about stocking stuffers yet... special treats (rasinets, peanut butter cups, socks, undies, toothbrushes and toothepaste, shampoo, lotion...) No ideas for Josh yet, I got him 2 Boise State t-shirts so far. I think we aren't buying each other much. It's hard when you just buy pretty much whatever you want when you want it lol.

Applesauce
Well in an effort to eat more clean we made homemade applesauce. So here is the recipe (not that it's really one lol) and the story =)
1. a bunch of apples (Gala make sweet sauce, Macintosh make a more tart sauce)
2. cinnamon
3. some water
4. helpers, optional =P
Start with a bunch of yummy and delicious apples (the fresher the better!). We went with some local apples because why buy apples from Mexico when you can get some grown right her in NY with the added benefit of helping your own economy and without all that extra gas/oil used to move the fruit such a long distance (reading Animal, Vegetable, Miracle by Barbara Kingsolver last year really made me take note of where stuff is coming from and how much energy is used to get it to your kitchen table). Anyway... the yuumy apples:
peel your apples and give your helpers some to keep them occupied as it takes a long time to peel 20 apples:
now cut your apples up in chunks (no need to be fancy) and then have your helpers toss them in a large pan, add about 1/4 water took keep the apples from burning and sticking to the pan
take a break and play with your helpers:
add some cinnamon:
cook on simmer stirring every once in a while until it looks something like this:
depending on your apples and how much cinnamon you use it make look differently (some apples look quite a bit smoother after cooking). Enjoy your yummy applesauce either warm, my personal choice, or cold =)

Fall is Here
Fall is definitely here. That cold crisp morning air is my favorite type of weather, followed closely by a misting rain in Scotland, but, I don't get to enjoy that on a regular basis. Someday, I'll go back to Scotland and maybe hop across to Ireland too...
Granny, the kids, and I all went apple picking at a local orchard. With all the helping hands it only took about 10 minutes to fill up our bags. I should have gotten more apples though because I have a yen for homemade applesauce and the Jola Gold apples were delicious in my crisp, so, I know they would make a yummy applesauce.
School has started up and Addison loves it. She wakes up talking about school and wanting to watch for the bus. Her class went on a field trip to the Heuvelton Volunteer Fire Department. She had a great time. All she could talk about was "firing the hose." She told me that everybody's mom went except for me (which isn't true), so, I told her I would go to her next field trip. Hopefully, it's somewhere fun!
So I made an executive decision for our family. Our entire family is going gluten free. This is for two reasons. First, so that Josh will have a "safe zone" where he doesn't ever have to worry about what he is putting in his mouth because every choice will be safe. And secondly, in case our kids end up with celiac disease too, it will not be a major change in their eating habits (they can't miss what they don't know...). While we aren't throwing away our food with gluten in it (I just can't bear the thought of all that money in the trash), we won't be purchasing any more foods with gluten in them. When it's gone, it's gone. I have been eating gluten free for a week now and it's nice to be able to kiss my hubby on the lips without having to plan it a day in advance! Of course there are plenty of foods that are gluten free and not healthy, like Schwans ice cream, that I need to start avoiding.
My next change is making my own laundry detergent! I think I'm going to do it this weekend. I still need to figure out how to add some scent. So I'll make sure to blog the whole thing. I should plan on doing one new thing like that a month... not sure if I will though.
